Induction stoves are known to be highly efficient when it comes to delivering heat in quite a short amount of time. However, they are quite fickle because not all types of pots and pans are compatible with induction ranges. Now that many kitchens have shifted towards a more eco-friendly solution, the need for more induction cookware sets is highly in demand. Here, I’ll talk to you about what type of cookware works best
What is an induction stove?
Induction stoves are named for their ability to use induction heating or the use of electromagnetic induction to directly make the cookware heat up on its own without the need for a heating element. Unlike gas and halogen stoves that rely on thermal conduction where the ranges use a heating element to heat the cookware, induction ranges turn the cookware into its own source of heat. See "Best Cookware For Gas Stove" for reviews and recommendation of the most suited cookware sets for gas stoves.
They are usually flat glass type stovetops. However, unlike halogen stoves and ceramic cooktops, induction stoves do not heat up.
How does an induction stove work?
Induction stoves use the process of electrical induction in heating rather than the use of thermal conduction. This means that electrical induction helps the cookware generate its own heat using electromagnetic waves. In simpler terms, it churns heat from the cookware instead of using direct contact with flame or other sources of heat.
For that to happen, the cookware needs to have ferromagnetic metal or any metal with iron like cast iron and stainless steel for it to work. Other types of metal like pure aluminum won’t be able to generate its own heat through induction heating.
Is an induction stove safe?
Induction stoves are probably the safest types of cooktops to date. Since they don’t require a heating element, induction ranges do not heat up other materials unless they contain iron or other magnetic metals. For that reason, even when you’re cooking, the stovetop remains cool to the touch.
Induction stove vs gas stove: Which is better?
In many ways, induction stoves are far more advanced than typical gas and electric stoves.
Heating Speed
Since gas stoves rely on thermal heating (i.e. transferring heat to the cookware), it takes much longer for the cookware to heat up in contrast to induction stoves. Conduction heats your food in two different stages. The first is heating the cookware and then the food you’re cooking.
Fuel and heat transfer efficiency
Induction ranges are more energy-efficient compared to gas stoves since cookware heats faster. The process of induction transfers 90% of the heat directly to the food making heat transfer more efficient. On the other hand, only about 50% of heat reaches the food using gas and electric stoves mainly because most of the heat gets transferred to the cookware and then to the food.
Compatibility
All types of pots and pans are compatible with gas and electric stoves. Unfortunately, that is not the case with induction stovetops because only cookware made with magnetic metals like cast iron and stainless steel are compatible with electromagnetic induction. See" best cookware set for electric coil stoves" to learn more about which cookware is suited for your stove.
Safety
Gas burners are highly flammable and can be a kitchen hazard when left unmonitored. Induction stoves are incompatible with practically everything around your house, these types of stoves are less likely to cause any fire or any type of kitchen hazards other than burning your food.
Cost
Induction stoves are cheaper than gas stoves overall. Contrary to belief, induction stoves do not consume much electricity. In fact, they are 90% more efficient in conserving energy thus slicing off about 30% off of your electric bills.
