This campfire nachos recipe will definitely make your snack time very interesting and fun. You can also make children help in the cooking process.

Ingredients

  • 1 pack of plain tortilla chips (baked)
  • 1-2 cups of shredded cheese
  • 1 1/2 cups of Salsa or 1 can of tomato sauce
  • 1 lime cut into wedges
  • 1 bunch or 1 handful of fresh cilantro, chopped
  • 1-2 medium sized fresh tomatoes, seeded and diced
  • Green or red bell peppers, seeded and diced
  • 1-2 ripe avocados
 

Directions:

Basically, campfire nachos is easy to prepare. You just bring all the ingredients together and once it’s ready you can enjoy your snack. There are 2 parts in its preparation – the chips and then the dip.

Nachos:

Step 1: On a saucepan or dutch oven, put a handful of tortilla chips.

Step 2: Sprinkle olives, jalapenos and cheese over and then place some salsa or tomato sauce on each tortilla chip.

Step 3: Add another layer. Place another handful of tortilla chips over the ones you’ve decorated earlier and repeat step 2.

Step 4: Add layers depending on how small or how big your container is but it would be advisable to put up to 3 layers and if you have more then do another batch since it’s easy to cook. Just make sure you have enough cheese and sauce for all layers.

Step 5: Outdoor: Place under the campfire embers with the lid on and let it cook for about 5 minutes and then you can take it from the heat source and let it cool for about 1 minute then eat.

Indoor: Place the dutch oven on the stovetop and put the lid on so that the heat would circulate around the chips and cook. Leave under medium high heat for about 5 minutes. Let it cool for 1 minute then serve.

Tips:

  • If you don’t have a lid, you can also place a tin foil on top of the pan or dutch oven.
  • If your kids don’t like spicy flavor, you can skip on putting the jalapenos or just put 1-2 small sliced pieces when you’re preparing the very first layer.
  • You can also use beans instead of olives.
  • You can also add vegan pepperoni

Step 1: Slice all the avocados lengthwise and remove the seed at the center using a spoon.

Step 2: Scrape the avocado flesh using a spoon and place it into a bowl.

Step 3: Squeeze the lime juice over the avocado flesh and mash them with a fork.

Step 4: Add the diced fresh tomatoes and mix them well together and your dip is ready.

Tips:

  • You can add some salt and cumin powder with your dip for added flavor.
  • You can include 1/4 cup of onions aside from the fresh tomatoes in your dip.
  • You can add more avocados depending on what or how many you prefer.
